If you want a quick, easy, fruity, crispy dessert, these mini strawberry strudels are just what you need. They’re a really fun bite-size, but you can also make one strudel instead of the minis.
For this recipe, I made strawberry preserves because it’s strawberry season. If you don’t have fresh strawberries you may use strawberry jam. In fact, you may use any kind of jam, Nutella, or any kind of filling. This is a very quick easy dessert that you can whip up in no time.
If you use up all the preserve and pastry, you will make about 30 mini strudels, so you can make half and the rest later, which is what I did, the preserve last a while in the fridge, at least 2 weeks so you can save it up for rainy desert needy days.
Mini strawberry strudels
Ingredients
- 500 g Puff pastry
- 500 g strawberries
- ¼ cup Sugar
- ½ tsp Lemon juice
- Sugar to sprinkleon top (optional)
Instructions
- Cut strawberries in small pieces and add to a pot togethr with sugar
- Add the lemon juice
- Cook on low-med heat until the mixture has thickened a bit
- Roll out puff pastry and cut it into small rectangles
- Add the strawberry preserve on one side of the pastry
- Use a knife to make air pockets by cutting out lines on the other part of the rectangle
- Fold over and close off the pastry with a fork
- Brush over buttermilk or milk on top of the pastry
- Sprinkle with sugar
- Bake in preheated oven at 200°C for about 20 minutes or until theyre golden brown
- Enjoy these delicious mini strudels
