Fritule are just little delightful fried balls of happiness. I love them and if you haven’t tried them, this is the time. Fritule are small, doughnut-like balls ( fritters) that bring together the scents or citrus, sometimes a hint of rum and a bit of sweetness. Traditionally, they are made with a simple batter, flavoured with a hint of lemon zest or orange. There are now a lot of variations but this recipe is simple and sticks to the basics.
Fritule (Balkan yoghurt fritters) take just about 30 minutes to make and they taste amazing. If you’re craving doughnuts but cannot wait for the dough to rise, these fritters are just perfect.

Ingredients
- 300 g Flour
- 3 Tsp Baking powder
- 3 Tbsp Sugar
- Pinch of salt
- 2 Eggs
- 300 g Yoghourt
- Lemon zest
- Vanilla extract
- Oil to deep fry
Instructions
- Mix dry engredients in one bowl
- Mix liquid ingredients in another bowl
- Add liquid ingredients to dry
- Mix carefully, do not overmix
- Scoop out the batter with a spoon and deep fry in oil
- Fry until golden brown
- Once done, sprinkle with sugar or dust with icing sugar
