Banana bread or cake is one of the most baked recipes, ever. There are millions of recipes on google with each promising theirs as the best; be it classic, spicy, gluten-free, vegan, you name it. So, this recipe is a good banana bread recipe. It’s the type you can keep and go back to on normal days when you have banana bread cravings. With so many recipes out there, it can be too much work and stress to find the right one.
This recipe is basic, with a hint of spices. It’s cakey, so you can’t really spread butter on it. It’s easy, one bowl and takes about 10 minutes to prepare.
Ingredients
- You need to use overripe bananas to get good banana bread. I wait for the bananas to turn black and really sift. When growing up, I remember banana bread to be dark with strands from the bananas. It’s not like that anymore, mainly because bananas don’t ripen the way they used to. So, it would be advisable to get organic bananas to get that real dark banana bread look and taste.
- The recipe calls for oil and butter because oil adds moisture and butter tastes good. I usually use both in my recipes, unless I really cant
- I add both brown sugar and syrup to the bananas. Syrup may be maple syrup, golden syrup or even honey. You may also use treacle instead or regular brown sugar, then leave out the syrup. The point of the combo is moisture and taste. The added syrup gives a more caramelly taste. When you use treacle, you already have the syrup in the sugar, so no need to add it then.
- The addition of spices elevates the taste in this recipe. You may leave the spices out if you don’t like that kind of taste, but it works very well with bananas.

Banana bread
Servings 1 Loaf
Ingredients
- 3 Cups Flour
- ½ Cup Brown sugar
- ¼ Cup Maple Syrup
- 100 g Melted butter
- 65 ml Oil
- 2 Large Eggs
- 2 tsp Baking powder
- 1 Tsp Bicarbonate of soda
- ¼ Cup Yoghurt or buttermilk
- 3 Large Bananas
- 1 tsp Mixd spice
- ¼ Tsp Cinnamon
- Pinch Nutmeg
Instructions
- Preheat oven to 180°C
- In a bowl add bananad and mash with a fork
- To the bananas add sugar and mix
- Add in butter and oil, mix
- Add in dry ingredients and fold
- Lastly add yoghurt and mix
- Pour the batter into a prepared loaf tin
- Sprinkle brown sugar on top of the batter
- Bake for abot 50 minutes
- Remove from the oven, let it cool for about 10 minutes
- Turn the bread onto a cooling rack, enjoy
