These coconut crescent cookies are easy to make and they taste amazing. If you love coconut, these will be your next favourite cookies. To make them you literally just mix everything together and voila. You can use your hands to mix, just like when making scones. How easy is that… They have a perfect crisp on the edge of the crescent and they have a soft centre, though not soft like cakey, but just perfect.

Coconut: These coconut crescent cookies have just the right amount of coconut, however, if you have a coconut addiction, go ahead and add up.
Sugar: The sugar in the cookies is just enough and with the icing sugar coating, there is a great balance of sugar.

Coconut crescent cookies
Ingredients
- 250 g Soft Butter
- 250 g Flour
- 1 Tsp Baking powder
- 100 g Coconut
- 150 g Sugar
- 1 Egg
- Pinch of salt
- Vanilla extract
Instructions
- Mix all dry ingredients together excluding the egg
- Add the egg and vanilla
- Mix to form a soft dough
- Let the dough rest for 10 minutes
- While the dough is resting preheat your oven to 180 degree Celciuss
- Take small dough and make into crescent shapes
- Place on prepared pan and bake for about 12 minutes
- When the cookies are done, let them sit for about 10 minutes and roll them in icing sugar
- Enjoy warm or cold
