Picture this- golden, flaky layers of filo pastry embracing a savoury filling of creamy delicious feta cheese, all brushed up with a generous amount of decadent butter and adorned with crunchy sesame seeds. That sounds delicious, right? The results are beautiful really tasty filo feta triangles, quick, and very easy to make. If you’re looking for a quick snack to wow someone or even yourself, this is it. They look like they took an effort to make, but really just simple and totally delicious.

I think filo pastry is the most popular pastry in the Balkans, there are alot of pastries using filo more than other pastries, such as Gibanica, Serbian cheese pie which is very popular, and a whole lot of others too. So if you’re into Balkan food you have to get very well acquainted with filo pastry. Anyway, back to the filo feta triangles. You need only 3 ingredients, the sesame seeds are optional, believe me, these taste amazing.

Creating the layers

When working with filo pastry, the secret is to be as quick as possible or cover the pastry you’re not working with to prevent it from drying out. Place a single sheet on a clean surface, brush it lightly with butter then place the second sheet. Brushing the pastry with butter contributes to a delightful golden crispiness of the triangles at the end, how delicious.

The savoury filling

The creamy, tangy feta cheese pairs very well with filo pastry. Make sure to cut the feta into blocks to make an encasing from the triangles. Be mindful not to over-stuff, because balance is the key to a perfect bite.

Fold, brush, and sprinkle

Once you have placed the feta on the filo strips, carefully fold them to make triangles. Brush the triangle with melted butter, sprinkle sprinkle, and into the oven they should go. You should definitely have yourself a beautiful snack or light meal in no time. My kids love these and I make them so very often. You may switch up the fillings if you feel creative. You can add mushrooms, like these Mushroom phyllo rolls (pita sa percukama) or even drizzle the filo feta triangle with honey after baking, they taste amazing. Filo feta triangles

Type of dish Appetizer, Snack
Servings 8 triangles

Ingredients

  • 4 Filo sheets
  • 2 tbsp Melted Butter
  • Feta cheese
  • Sesame seeds (optional)

Instructions

  • Preheat oven to 180 degrees
  • Line one filo sheet and brush butter on it
  • Put another filo sheet on top of the buttered one
  • Divide the filo sheets into 4 strips
  • Place a cube of feta at the bottom end of each strip
  • Fold over into triangles
  • Brush with butter on top and sprinkle with sesame seeds
  • Bake for about 15 minutes, or until golden brown
  • Enjoy
