This sauce is like magic, I always have it in the freezer or fridge and it’s a base for many dishes that I make. You may use it as a pasta sauce, for these amazing Meatballs in tomato sauce, as a relish, for shakshuka, and for many more dishes. It’s literally the tomato sauce you need all the time.
Ingredients
- Tomato: This is the base of the sauce and you need the best tomatoes you can get to get a really good sauce. I use canned tomatoes when tomatoes are not in season, and fresh tomatoes during tomato season because Serbia has really really good tomatoes.
For this sauce, you may use fresh or dried ingredients, they both work well.
- Herbs: This sauce requires oregano and basil. The combination is just perfect and they both keep the sauce simple enough, should you wish to add it to anything else
Marinara sauce
Ingredients
- 1 Large Onion
- 3 Cloves Garlic
- 1 Can Tomatoes
- Oregano
- Basil
- Salt
Instructions
- Dice and saute the onion for about 20 minutes
- Add diced garlic and fry for about 2 minutes
- Add oregano
- Blend the tomato till almost smooth
- Add tomato to onion
- Cook on low heat for about an hour or until it reaches desired consistency
- Season with salt, add basil and use as desired
Notes
- For this recipe, I use dried oregano
- You can also use dried basil, just add it while the sauce is cooking, towards the end
- The more you cook the sauce, you will get a rich deep flavoured sauce. Less coking will yield a thin fresh tomato taste kind of sauce. Should you desire that taste, it’s best to use fresh tomatoes, but they have to be really good tomatoes.
- Low heat is is good for this sauce
- The sauce has few ingredients, so the quality of the tomato plays a very important role
This is a very simple, yet delicious and useful sauce. I hope you try it and enjoy it as much as I and my family do, and that it adds more delicious dishes to your table.
