Easy, simple, delicious breakfast. Polenta with cheese is a very basic kind of breakfast that is comforting and very homely. Most of us grew up with porridge of some sort, so eating this will evoke a memory. There’s something honest about corn; it’s original, earthy, humble yet comforting, and assuring. It’s like when there’s hunger, corn is there; nothing fancy yet delicious and homely
For this recipe, I use white cheese or Feta cheese. When you fry the cheese, keep the heat low and let it do its thing, melt and become almost creamy. I usually add just a little more before adding the polenta so I can have some crumbly cheese too in the porridge.

Polenta with cheese
Ingredients
- ½ cup Polenta
- Boiling water
- Feta
Instructions
- Cook polenta according to package instructions
- In another pot, fry the cheese for at least 5 minutes
- Add the cooked polenta to the cheese
- Serve and enjoy with yoghurt
