Cauliflower soup is one of my favourites, actually, I just love soup in general. When making a one-ingredient soup, I believe it’s important not to add too many ingredients so the soup can taste like the main ingredient, as it should. This soup contains only 4 ingredients, including the cauliflower. It’s simple and quick and tastes amazing.
In this recipe, I boil the cauliflower instead of roasting. mainly because I sometimes just love the simplicity of things, like normal delicious soup. Roasting does give a deep smoky flavour to the cauliflower soup, but to me, this soup is homely and just perfect the way it is. If you feel like the roasted taste of soup, these Roasted tomato soup and Roasted pumpkin soup taste amazing. Obviously, there are days for roasted soup, but today is not that day.
Ingredients in soup
The ingredients are simple, basic, and easy to find. And, with regards to vegetable stock, if you don’t have it you may use just water and season with powdered vegetable stock or not if you don’t have that either. You may add a bay leaf while boiling the cauliflower and remove it during the blending process.
The addition of cream is also optional because the cauliflower is creamy on its own However, that tablespoon or two tablespoons of cream elevate the flavour of the soup in some way. You need just a tablespoon or two and not more.
The simplicity of this soup is what makes it elegant and homely. I really hope you love it as much as my family and I do.
Cauliflower soup
Ingredients
- 1 Head Couliflower
- 1 Onion
- 4 Cloves Garlic
- 1 Stick Celery
- 3 Cups Vegetable stock
- 1 tbsp Cream
- Salt and pepper
Instructions
- Prepare all the vegatables; chop cauliflower, dice onion, celery and garlic.
- Saute onions and celery, when soft add garlic and fry doe a minute
- Add chopped cauliflower and vegetable stock or water
- If adding water and not stock, season with vegeta or powder stock (optional)
- Let the cauliflower cook until soft
- Blend until smooth
- Add cream and season
