These blueberry muffins are not only quick and easy but really delicious too. The good thing about muffins is that, once you get the hang of making them, you’re literally twenty minutes away from fresh, tasty muffins for breakfast, brunch or just to satisfy your cravings.
Blueberry muffins are just beautiful; both to eat and to look at. Whenever I have blueberries and feel like a quick home bake I make these muffins or blueberry scones. I hope you love these muffins as much as I do because they’re simply delicious.
Easy, tasty blueberry muffins
Servings 12 muffins
Ingredients
- 2½ Cups Flour
- ¾ Cup Sugar
- 2 Tsp Baking powder
- ½ Tsp Bicarbonate of soda
- Pinch Salt
- 2 Eggs
- 1 Cup Buttermilk or plain drinking yoghurt
- ¼ Cup Oil
- ¼ Cup Melted butter
- Vanilla extract
- 1 Cup Blueberries
- ¼ Cup Brown sugar
Instructions
- Preheaat your oven to 200 degrees C
- In one bowl mix all the dry engredients
- In another bowl mix the liquid ingredients
- Add the liquid ingredients to the dry and mix together
- fold in the blueberries
- Pour batter into a prepared muffin tin
- Bake for 20 minutes or until they are a nice golden colour
Notes
- Do not overmix the batter both when mixing dry and liquid ingredients and when fold
- The melted butter may curdle when mixed with other liquid ingredients. that’s ok
