Easy, tasty blueberry muffins

Ingredients

  • Cups Flour
  • ¾ Cup Sugar
  • 2 Tsp Baking powder
  • ½ Tsp Bicarbonate of soda
  • Pinch Salt
  • 2 Eggs
  • 1 Cup Buttermilk or plain drinking yoghurt
  • ¼ Cup Oil
  • ¼ Cup Melted butter
  • Vanilla extract
  • 1 Cup Blueberries
  • ¼ Cup Brown sugar

Instructions

  • Preheaat your oven to 200 degrees C
  • In one bowl mix all the dry engredients
  • In another bowl mix the liquid ingredients
  • Add the liquid ingredients to the dry and mix together
  • fold in the blueberries
  • Pour batter into a prepared muffin tin
  • Bake for 20 minutes or until they are a nice golden colour

Notes

  • Do not overmix the batter both when mixing dry and liquid ingredients and when fold
  • The melted butter may curdle when mixed with other liquid ingredients. that's ok
