Roasted peppers are not popular in South Africa. When I first tasted this salad, it was so unfamiliar to me. It took me some time to fall in love, but as time went by, it has become a favourite and regular on our table. If you want to enjoy peppers; hot or not; this salad makes the pepper the star of the dish. The garlic and everything added enhances the flavour of the peppers. The best part is the roasted or char-grilled peppers, they just make this salad extra special.
This salad is a big Balkan favourite and is known as Belolučene paprike. It can be a side to almost anything and can be had for breakfast, lunch or supper. It’s easy to make, the roasted peppers make the kitchen smell great, and they give such a homely smell.
Roasted pepper salad
Ingredients
- 8 Peppers
- 2 Cloves diced Garlic
- Extra virgin olive oil
- 1 Cap Vinegar
- Salt to taste
Instructions
- Roast or char grill peppers
- Soften them in a closed container
- Gently peel them and add the to a dish
- Add salt, garlic, vinegar, then oil. In that order
- Taste and add what needs to be added according to tatse
- Chill and enjoy
Notes
- You may roast the pepper in an oven, char grill them, or even on a stovetop as in the pictures. How to: roasted peppers (Pecenje paprike)
- Let the peppers sweat and get cold before you peel them, give them time to soften so it’s easy for you to peel them.
- It’s important to leave the peppers in a closed container while they soften, the heat makes them soft and easy to peel.
