I got the idea for this roasted pepper sauce from my sister. It is so tasty, creamy, and super healthy. People think she can’t cook to save her life, but I’ve lived with her and never really cooked the whole time. When she mentioned this pepper sauce, I was sold immediately. I tried it and have been loving it since. It’s a go-to sauce for a lot of things, You can make a dip out of it, soup, or a base for curry, or better yet, add chicken or prawns into it as a pasta sauce. I love this roasted pepper sauce.
Do you have to roast the peppers?
The good thing about this sauce is that you don’t even have to roast the peppers, I mean it makes a great difference when you do, but it’s still really good even when you don’t. YOu can just fry them up with onion and add garlic and the rest of the ingredients before blending. It will still be super creamy and good.
Roasted pepper sauce
Ingredients
- 6 Peppers
- 1 Tomato
- 1 Onion
- 4 Garlic cloves
- 3 tbsp Olive oil
Instructions
- Preheat oven to 220 degrees
- Roast all the engredients for about 45 minutes
- Blend all the ingredients
- Add olive oil
Notes
- This sauce may be changed to soup, in that instance after blending transfer everything to a pot, add vegetable stock, and simmer for about 10 minutes
- You may use the sauce on sandwiches, meat dishes, fish or as pasta sauce.
