Not only do lentils taste great, but the health benefits are amazing too. They’re full of vitamin B, magnesium, zinc, and potassium. They’re a great meat alternative, just like this tasty lentil bolognese, and inexpensive. I love lentils and I try to make them as often as I possibly can, I mean, they’re also very easy to make, with not much effort at all. This red lentil soup is super easy and super tasty, it’s bound to be a favourite in any kitchen.
Red lentil soup
Ingredients
- 1 Cup Red lentils
- 1 400g Canned tomatoes
- 3 Cloves of garlic
- 1 med Onion
- ½ tsp Paprika
- ¼ tsp Ground ginger
- ½ tsp Turmeric
- 1 tsp Garam masala or curry powder
Instructions
- Saute chopped onion for about 10 minutes until its transluscent
- Add garlic and fry for 3 more minutes
- Blend tomatoes and add to the onion
- Add lentils, spices and vegetable stock
- Cook for about 30 minutes or until the lentils are soft
- Take half of the lentils, blend till smooth an return to the pot
- Let it simmer for a few minutes, add water to get the desired consistency
- Season with salt and enjoy
Notes
- You may add more spices if you prefer a more spicy soup. This also included chili.
