Red lentil soup

Ingredients

  • 1 Cup Red lentils
  • 1 400g Canned tomatoes
  • 3 Cloves of garlic
  • 1 med Onion
  • ½ tsp Paprika
  • ¼ tsp Ground ginger
  • ½ tsp Turmeric
  • 1 tsp Garam masala or curry powder

Instructions

  • Saute chopped onion for about 10 minutes until its transluscent
  • Add garlic and fry for 3 more minutes
  • Blend tomatoes and add to the onion
  • Add lentils, spices and vegetable stock
  • Cook for about 30 minutes or until the lentils are soft
  • Take half of the lentils, blend till smooth an return to the pot
  • Let it simmer for a few minutes, add water to get the desired consistency
  • Season with salt and enjoy

Notes

  • You may add more spices if you prefer a more spicy soup.  This also included chili.
