They don’t require any special dishes or fancy techniques- just a bit of love and creativity. The galette is meant to look homemade with its relaxed presentation; it just invites everyone to dig in.
Tips for the perfect blueberry galette
- Use cold ingredients for the pastry. This helps to create a flaky texture. You may even chill the flour and the dish to be cautious.
- Don’t overwork the dough. Just mix the ingredients until they come together, overworking the dough will create a tough crust instead of a flaky one.
- Chill the dough. Allow the dough to rest for at least 30 minutes to relax the gluten. This will lead to the dough being easier to roll and also a tender crust.
- Roll evenly
- Leave room for juices. When filling the pastry, do not overfill.
- Eggwash to make it pretty, also add sugar, or almond flakes; that makes the galette look beautiful.
- Let it cool. After baking the galette, let it cool for about 10 to 15 minutes for the filling to set a bit, making it easier to serve

Blueberry galette
Servings 4 people
Ingredients
Pastry
- 1½ Cups Flour
- 125 g Cold butter
- 1 Tbsp Sugar
- 1 Tbsp Very cold water
- Pinch of salt
Blueberyy filling
- 2 Cups Blueberries
- 1 Tbsp Cornflour
- ¼ Cup Sugar
- ½ Lemon rind
- ½ Lemon juice
Instructions
Pastry
- Put all ingredients together except water
- Mix until the mixture has small lumps of butter
- Add water and mix until it forms a pastry dough
- Wrap with cling wrap and refregirate until ready to use ( 30 minutes)
Blueberry galette
- Add all filling ingredients together
- Roll out the patsry on flat surface for one large or two smaller galettes
- Add filling in the middle of pastry and fold the outer part inwards
- Eggwash the edges and sprinkle with sugar
- Bake in a preheated oven, 200 degrees for 25 minutes or until the galette is golden brown
- Remove from oven and let it cool before you move it
