These coconut biscuits are so delicious you won’t stop eating them. They’re neither hard nor soft, and the chocolate just makes them even more addictive. The chocolate is, by the way, optional; it’s just there to give the biscuits that extra “joy”, but this cookie is actually already a happy one. I use brown sugar because it makes the biscuits moist, which gives it just the perfect texture.
Coconut biscuits
Ingredients
- 125 g Butter
- 1 Cup Brown sugar
- ½ Tsp Baking powder
- ½ Tsp Bicarbonate of soda
- 1 Cup Flour
- 1 Cup Coconut
- 1 Egg
- 1 Tsp Vanilla extract
- Pinch of salt
- 100 g Chocolate (optional)
Instructions
- Cream butter and sugar until it's a creamy pale mixture
- Add the egg and mix
- Add vanilla extract
- Mix dry ingredients together and add them to the butter micture
- Form balls of the same size and place on a prepared tray with parchment paper
- Bake in a preheated oven on 200 degrees for about 15 minutes
- Place chocolate in a bowl over simmering water to melt
- Dip cold cookies in the chocolste and decorate
- Let the chocolate set and enjoy
