Coconut biscuits

Ingredients

  • 125 g Butter
  • 1 Cup Brown sugar
  • ½ Tsp Baking powder
  • ½ Tsp Bicarbonate of soda
  • 1 Cup Flour
  • 1 Cup Coconut
  • 1 Egg
  • 1 Tsp Vanilla extract
  • Pinch of salt
  • 100 g Chocolate (optional)

Instructions

  • Cream butter and sugar until it's a creamy pale mixture
  • Add the egg and mix
  • Add vanilla extract
  • Mix dry ingredients together and add them to the butter micture
  • Form balls of the same size and place on a prepared tray with parchment paper
  • Bake in a preheated oven on 200 degrees for about 15 minutes
  • Place chocolate in a bowl over simmering water to melt
  • Dip cold cookies in the chocolste and decorate
  • Let the chocolate set and enjoy
