Muffins are little pleasures of life, like scones. They brighten up mornings and make places feel and smell homely. At least that’s what they do to me, maybe because they were a part of my growing up. These lemon poppy seed muffins are simply delicious. Obviously lemon and poppy seed are a very popular combination and that’s for a reason; they go very well together.
In the Balkans, poppy seeds are very popular, and not with lemon but at a much more concentrated level and alone (not combined with anything like lemon). You get them in bread, cookies, baklava, and a whole lot of other stuff… I didn’t get used to that flavor for a very long time because it’s very strong and just takes over in your mouth, its totally an acquired taste. Such tastes are loved usually by people who grew up with them and in this part of Europe that flavour is cherished. Sometimes it’s not because it’s a good taste, but because of memories, places, and times. So eventually I acquired the poppy seed taste and well, I guess I’ve come to somehow love it too. Anyway, these lemon poppy seed muffins have just the right amount of poppy seed, which is 2 tablespoons, nothing more.
So, if you’re a sweet breakfast type of person, or just love muffins, you’ll definitely love these lemon poppy seed muffins. They’re soft, moist and beautifully put together. They’re my personal favourite and you will definitely enjoy them too.
Lemon poppyseed muffins
Ingredients
- 2½ Cups Flour
- ¾ Cups Sugar
- 2 Tsp Baking powder
- ½ Tsp Bicarbonate of soda
- 1 Cup Buttermilk or yoghurt
- ¼ Cup Sour cream
- 3 Eggs
- 2 Tbsp. Poppy seeds
- 1 Lemon rind of one lemon
- Lemon juice of one lemon
- ½ Cup Melted butter
- ¼ Cup Oil
- Pinch of salt
- Vanilla extract
Instructions
- In one bowl mix all the dry ingredients
- In another bowl mix all the liquid ingredienst
- Add the liquid to the dry ingrediens
- Mix together bit do not overmix
- Scoop the batter into a muffin tin
- BAke in a preheated oven, 180 °C for 15 minutes or until golden brown
- Mix lemon juice and icing sugar to make a glaze and drizzle on muffins when theyre cool
Tips
These muffins has just enough of sugar, you you love sweeter muffins, you can increase to a cup of sugar.
