Lemon poppyseed muffins

Ingredients

  • Cups Flour
  • ¾ Cups Sugar
  • 2 Tsp Baking powder
  • ½ Tsp Bicarbonate of soda
  • 1 Cup Buttermilk or yoghurt
  • ¼ Cup Sour cream
  • 3 Eggs
  • 2 Tbsp. Poppy seeds
  • 1 Lemon rind of one lemon
  • Lemon juice of one lemon
  • ½ Cup Melted butter
  • ¼ Cup Oil
  • Pinch of salt
  • Vanilla extract

Instructions

  • In one bowl mix all the dry ingredients
  • In another bowl mix all the liquid ingredienst
  • Add the liquid to the dry ingrediens
  • Mix together bit do not overmix
  • Scoop the batter into a muffin tin
  • BAke in a preheated oven, 180 °C for 15 minutes or until golden brown
  • Mix lemon juice and icing sugar to make a glaze and drizzle on muffins when theyre cool
