I first tasted mushroom phyllo rolls when my husband’s family was fasting, before one of their celebrations. I personally like mushrooms so I leaned towards the mushroom rolls instead of the potato rolls they bought. They weren’t very nice, just ok, but ok, that was breakfast that day, it was a family thing they were having.
What struck me was that later on, I had a craving for the phyllo rolls and thought well, why not make them. I knew how to make this Gibanica, Serbian cheese pie that time so I figured, if could make that, these would be nothing.
So I ask my mother-in-law how and she gives me a quick “recipe” and off I go.
These phyllo rolls are simple and tasty and should definitely be a crowd pleaser. I’ve been making them since for a while now and they’re easily becoming a favourite. If you like mushrooms, this one is for you, and if you don’t really, they’re definitely worth a try.
How to make mushroom phyllo rolls
Mushroom phyllo rolls (pita sa pečurkama)
Ingredients
- 8 Phyllo sheets
- 500 g Button Mushrooms
- 2 Small Leeks
- Vegeta or vegetable spice
- Olive oil
- Sparkling water
Instructions
- Add olive oil to a pan and fry saute leeks on low-medium heat for about 5 minutes
- Add diced mushroom to the leek and cook until the water has evaporated
- Add vegeta to taste
- Layer three phyllo sheets and cute into 9 equal parts
- Mix oil and sparkling water in a cup and use a brush to brush between the layers of phyllo as youre working on one part at a time
- Add a spoonfull of the mushroom mixture and rolls as if youre making a spring roll
- You may use the water oil mixture to glue the phyllo roll
- Do the same until you phyllo sheets and mushroom mixture are done
- Bake in a preheated oven on 200 °C until theyre golden brown
- Remove from over, sprinkle some sparkling water on the pastry and cover with a tea towel for about 10 minutes
- Enjoy
