Roasted tomato soup

Tomato soup equals comfort food, period. This blog is about homely, good, comfort food, and tomato soup is one of my favourite soups. With that said, there is normal tomato soup where you cook tomatoes and stuff, blend and you have good soup. And then there’s roasted tomato soup, the ultimate tomato soup where the tomato flavor is just appreciated and elevated. This is where we’re at today.

If you come to Serbia in the summer, amongst a whole lot of other things, you’ll fall major in love with the tomatoes. They’re so sweet and tasty that you’ll literally just snack on them. Breakfast; bread, tomato, and domestic cheese, and that’s just enough. So, this tomato soup is an absolute delight with these tomatoes.

This roasted tomato soup might not be the quickest, but every step is worth it because you’ll get smooth, flavourful tomato soup at the end. There is nothing worse than getting bits of skin in soup so taking care of every step is essential.

Ingredients

Tomatoes: Use the sweetest tomatoes you can find. This is tomato soup, so your main ingredient should be your best ingredient.

Paprika/bell peppers: To Tomatoes, I add paprika which may be substituted with bell peppers. Paprika and tomatoes go very well together, and paprika adds a whole lot of creaminess to tomato soup, that you don’t even need cream. Once you blend paprika, magic. Paprika is definitely one of the most underrated vegetables and works so well together in many dishes. Also, check out this Roasted pepper sauce, it’s amazing to add to so many dishes.

Garlic: Garlic is also added to this soup as it adds some garlickiness, I mean who doesn’t like garlic? I don’t add too much so the garlic flavour is just perfect.

The process

As I mentioned, this soup does not take 5 minutes. This is because; after you roast the tomato and paprika, you have to peel them. To peel the peppers, you have to let them sit a while in a closed container to steam up and soften up, they then become very easy to peel.

After peeling the vegetable you’re practically done. Youll have yourself smooth flavourful, delicious tomato soup. \

Ingredients

  • 4 Large Tomatoes
  • 2 Paprikas/Bell peppers
  • 1 Onion
  • 5 Garlic cloves
  • Vegetable stock
  • Salt and pepper to season
  • Fresh cream (optional)

Instructions

  • Roast tomatoes, garlic and peppers on 180 degrees
  • Saute the onion
  • When the vegetables are done roasting, put the pepper in a closed container so they can sweat and get moist to peel
  • Peel the tomatoes, then the soft peppers
  • Add the vegetables to the onion
  • Add a cup of vegetable stock and blend until smooth
  • Season with salt and pepper
  • Add cream if you wish to
  • Mix and enjoy
